A is for Ackee

While I was in Jamaica last summer, I tried out my first raw ackee salad...a great departure from the ackee and sailfish Jamaican national dish that I am used to. It's just so wonderful what adding fresh seasonings and chopped veggies can do to create a new juicy combo!

Ackee

Raw Ackee Salad

1 cup fresh fully ripened ackee
1 large firm tomato
5 scallion
2 sprigs fresh thyme
1/2 scotch bonnet pepper (seeds removed), or chilli of your choice
1/2 tsp salt
juice 1/2 lemon

Optional additions:
add your favourite baby sprouts, soaked pumpkin seeds, avocado.

Do This:
Thoroughly wash and prepare your ackee. Remove all seeds.
Slice ackee arils and set aside in a dish.
Chop tomato and scallion and add to sliced ackee.
Season with chilli, thyme, salt and lemon juice, adjust to suit.
