However raw beets are certainly very versatile, you can make raw dehydrated heart-shaped crackers, (good for valentines day), it's great when shredded and added to exciting salads, adding a little crunch; plus you can thinly slice beets to create beet ravioli, filled with a gorgeous raw nut pate; or spiralise raw beets to make juicy, crispy noodles, then dress them with your own favourite herby or spicy raw blended sauce.
