Zambian Okra Salad

Last week in Lusaka (Zambia), I sampled a delicious local okra salad. Made with locally sourced ingredients, the simplicity of the ingredients combined, created a juicy   

You will need:
2 cups okra, washed and chopped
4 large scallion, chopped
2 large pegs of garlic, minced
1/4 cup lemon juice
1/4 cup olive or sesame oil
handful parsley, finely chopped
handful sweet potato greens, stems removed and chopped
Salt and pepper or chilli to taste

Preparation:
Prepare all the ingredients. Place okra, scallion, parsley and greens in a bowl. Whisk lemon juice and oil together, mix in the garlic and add to other ingredients. Add salt and pepper to taste.

Optional: Serve with sliced avocado.  

Additional info:
According to an analysis published in the journal HortScience, it found that sweet potato leaves have 3 times more vitamin B6, 5 times more vitamin C, and almost 10 times more riboflavin than actual sweet potatoes. Nutritionally, this makes the greens similar to spinach, but sweet potato leaves have less oxalic acid, which gives some greens like spinach and chard a sharper taste. You can add the leaves to your smoothies.
