I am just loving this trip to Kerala and now that it's getting even warmer and mango season is beginning, there is inspiration all around to feed your senses...
Mango - Jeera Chia Pudding
240ml almond milk
1-2 mangos, peeled and de-stoned
2 pitted dates
1 tbsp chia seeds
1/4 tsp fresh jeera seeds (cumin)
Optional toppings: chopped mango, fruit, cacao nibs, chopped nuts, hulled hemp seeds, mint leaves etc.
Blend all the ingredients together, apart from chia seeds. Stir in the chia seeds and continue stirring rapidly for 2 minutes so the seeds don't clump together as they begin to form a gel.
Leave to set for a minimum of 15 minutes. Serve and top with your preferred choice of topping.
