My daughter loves these and it's certainly a great way to help her to get used an occasional healthier option...
You will need:
2 cups walnuts 2 soft dates 1/4 cup raisins 1/2 tbsp coconut oil 1 tsp cinnamon 2 tbsp cocoa powder juice of 1/2 orange
To decorate: organic dried coconut
Preparation: Place all ingredients in a food processor and pulse until the nuts are broken down and mixture sticks together, or to the consistency which you prefer, either soft or crunchy. Using a spoon, make equal sized individual scoops of the mixture and roll into balls. Place dessicated coconut into a container and roll balls in the coconut until completely covered.
Place in the freezer for 30mins-1 hour before serving. Eat as a celebration treat, serve with raw ice cream, or with kiwi sauce. Balls can be stored in an airtight container in the fridge for up to two weeks.
