Lunch is probably my largest meal of the day, usually sometime between 12.30pm -2pm. It gives me hours to digest the food, before a much light evening meal.

I used just basic ingredients to create this simple meal. It's eye-catching, flavourful and has lots of texture. Where possible, try to use organic ingredients and always soak your nuts and seeds prior to use, to release their enzyme inhibitors, making them more digestible (easier on your tummy).
