Blackberry Mousse

A quick end of summer fruit mousse.


A this time of year I love to go blackberry picking, it reminds of a childhood growing up in leafy south east London. My cohorts and I would pick and eat the wild berries until we’d had our fill. In those days you didn’t buy berries at the supermarket. So whenever I see them growing I’m off with my container to experience the joy that harvesting food brings…

My granddaughter like to mash them with a fork to make a quick raw jam for topping. Of course there are so many simple and creative ways to incorporate berries into your diet, I’m thinking about how I’ll use up the rest and I’ll be back to pick some for freezing.

Todays recipe is a raw blackberry mousse, easy and simple to make with a blender.

I used:

1 cup fresh blackberries

1/4 cup blueberries

I tbsp baobab fruit powder

1/2 tsp vanilla extract

1/2 tsp ground cinnamon

1 tbsp lime juice

I tbsp ground chia seed

1 tsp agar agar flakes

3 tbsp nut milk, (I used tiger nut milk), or more as necessary for mixture to combine in blender

Garnishes: I used dehydrated pitaya and strawberry with berries and hemp hearts

Do this:

Wash and prepare the fruit, add to your blender with the other ingredients, except the ground chia and agar agar.

Keep a few blackberries and blueberries back for garnishing.

Blend ingredients together until smooth, add more liquid, a little at a time if necessary to help the mixture to combine, then strain the mixture through a fine sieve. Return sieved mixture to the blender and combine with the ground chia and agar agar.

Immediately decant the fruit mixture into serving dishes and place in the fridge to set for 30 minutes. Garnish with fruit and other favourites (sprig of fresh mint, chopped nuts, hemp hearts etc.) and serve.

If you prefer your mousse a little sweet, you can use apple juice to blend, add soft dates, or a fruit syrup to taste.

Berries offers great nutritional value to your diet. They are high in fiber, vitamin C and antioxidant polyphenols, which may help to prevent and reduce symptoms of many chronic diseases, like cardiovascular disease.

I feel so fortunate to have been born on 24th July, its nearly always sunny and it's also in the holiday season.
